When you wake up after a night out, you need to replenish your lost nutrients. You also often have a craving for junk food. More specifically Mexican food. Eggs are generally hailed as a good hangover food; this is because of the taurine content, which gives you energy and yolk contains cysteine which helps break down nasty hangover causing acetaldehyde. There are also a lot of healthy veges hidden in this meal including avocado which is high in antioxidants and an anti-inflammatory (like Neurofen).
This is a foolproof recipe that only takes about 20 minutes to whip up. It serves two. But note, if you can’t handle chili, then don’t include it.
Ingredients
- 6 x soft tacos aka tortillas (NOT hard shell tacos, ain’t got time for that noise)
- 5 x eggs
- A medium sized brown onion
- A medium sized green capsicum
- 2 x tomatoes
- 2 x jalapeños
- A small red hot chili
- Cholula sauce (pronounced sowssse)
-A bunch of fresh coriander
- A lemon
- A packet of unflavoured corn ships
- An avocado
- Sour cream to serve
- Mozzarella cheese to serve
- Salt, pepper, vinegar, oil to taste
Method
Fresh Salsa:
1. Dice half the onion, one jalapeño, half the red chili, one tomato, the coriander and half the capsicum.
2. Mix all the fresh veggies in a bowl together.
3. Squeeze lemon juice into the mix oil and vinegar, to your discretion, season with salt and pepper.
Taco Filling:
1. Roll out of bed. Curse the world and have a drink of water.
2. Dice the other half of the onion, one jalapeño, half the red chili, one tomato and half the capsicum.
3. Heat up a table spoon of oil and add the diced veggies.
4. Sautee until the onion is transparent (other veges can still have crunch). Turn down the heat.
5. Crack eggs directly into the pan and stir until yolks mixed and veges spread evenly throughout mixture. Let it cook still for about 2 minutes.
6. When the egg is almost completely cooked give it a scramble.
7. Now crush some of the unflavoured corn chips into the scrambled eggs to give it crunch.
8. Serve with:
- Warm the taco tortillas in the microwave as per package instructions
- Scoop out the flesh of the avocado into a small bowl and season
- Cheese
- Sour cream
- Cholula
- Fresh salsa
9. Have everything above and the taco filling accessible on the table where you’re eating. Fill your taco however you like.

Variations:
- Adding corn kernels or beans (kidney, black) to the fresh salsa idelicious. These can also be added to the filling.
- You don’t have to use Cholula, but it is pretty awesome.
